Healthy Eats: Frugal but Fabulous Summer Recipes!

Hi Mike's bootcampers! I joined the team a month ago and have dropped 15 pounds. I was asked to drop the weight for a TV show. I never saw myself on TV and I never saw myself as needing to lose weight. I mean I am sure everyone who looked at me did, but I was comfortable in my curves. I embraced the challenge and started to look at every ingredient in every dish that I prepared. I focused on preparing gluten free, carb free, dairy free and sugar free meals. This new approach in conjunction with Mike's bootcamp has transformed my body, as well as my fitness and energy levels.

My favorite snack is home made humus. I take 2 cans of garbanzo beans, one table spoon of extra virgin olive oil, half a cup of freely squeezed lemon juice, 2 garlic cloves, 2 table spoons of tahini, and salt and pepper to taste. I combine all ingredients into a paste in the bender.  Garnish with a drizzle of extra virgin olive oil, sea salt, cracked black pepper, slithered almonds, and basil leaves.  I snack on it with carrots or  when I have company I bring out gluten free crackers. My favorite are rice crackers. .

Another super healthy, low-cal, treat that is worthy of serving guests, is my version of eggs Benedict. I poach 2 eggs per person and serve over heirloom tomatoes and fresh basil leaves. The tomato replaces the bread and instead of hollandaise, I make a delicious pesto. I actually serve two pestos. The green is, edamame beans, basil, lemon, garlic, salt & pepper. And my red is roasted bell peppers, chili, garlic, pine nuts, salt & pepper.

I love the camaraderie of Mike's bootcamp. It is always consistently brutal and when we manage to survive the hour, we applaud one another and that support at the end, is a source of inspiration to get me through the more brutal work days. Thank YOU!! xoox
