Green Papaya Salad Recipe
Unripe, or green papaya, is a typical ingredient used in Thailand. It is used as a vegetable and contains a powerful enzyme that aids in digestion.

2 cloves - garlic, minced
1⁄4 cup - lime juice
2 Tbs - fish sauce
1 Tbs - brown rice syrup
1 small - Thai chili, 1-2 inches, or same amount of serrano pepper, seeded, minced
1 lb - green papaya, peeled, seeded and shredded, about 4 cups
1 medium - carrot, shredded
15 whole - cherry tomatoes, halved
2 Tbs - chopped cilantro
2 Tbs - chopped Thai basil
1⁄4 cup - peanuts, toasted and chopped
Whisk dressing ingredients together in a large bowl until emulsified.
Prepare the salad ingredients as directed and add to the dressing. Toss well.
Serve salad topped with crushed peanuts.
